Bakery automation changes how logistics teams use labour

Automation is changing the work profile inside Penske Logistics’ bakery distribution operation in Illinois. The newly commissioned Cimcorp system is expected to reduce labour requirements by 50%, while removing a physically demanding part of the process: manually handling stacks of bread trays more than two metres high.

Before the project, employees unloaded, stored and picked bakery trays by hand. Overhead picking created ergonomic and safety concerns, and manual selection also increased the possibility of order errors. The new system uses MultiPick gantry robots and a Warehouse Control System to buffer and assemble orders automatically at tray level. Penske reports 100% order accuracy.

Redeploying people rather than removing capability

The workforce impact is not limited to a reduction in required labour hours. Penske says automation will augment the capabilities of its trained employees, allowing resources to be allocated to more strategic activities. The system takes over repetitive, high-reach handling while people remain important to the wider operation.

For logistics employers, this model can help address labour availability problems without relying solely on additional recruitment. It also changes the skills profile of the workplace. Staff working around an automated flow may need to focus more on monitoring, exception handling, process coordination and maintaining consistent service performance, although the source material does not specify new job titles or training programmes.

The modular design can scale for demand peaks and future growth, while real-time information supports operational decisions. Faster processing may also lead to fresher store deliveries. Penske selected Cimcorp because of its experience in bakery automation, including projects for Martin’s Famous Pastry Shoppe, Kwik Trip and Fazer Bakeries. The company’s wider logistics operation is described at Penske Logistics, with technology information available from Cimcorp.
